After spending time in Oléron, France last spring, I’ve come to prefer the French method of eating oysters. When you’re served oysters at a restaurant, they are still attached to the shell so that they’re alive (therefore fresh AF). If the oyster doesn’t retract when you squeeze a touch of lemon, it means that it’s dead, not alive and not fresh. . . .
